Babaorium at the Hong Kong Book Fair
Hong Kong, China— On July 16th 2025, I presented Babaorium as part of the World Culture and Art Gallery within the Hong Kong Book Fair. My latest pastry installation, consisting of an animated tank of Rum Babas.
Babaorium is a spatial performance in addition to a social event of communal eating. Whereas the Croquembouche was modeled on an old conception of society and the world, where order and hierarchy are structuring principles, the Babaorium is based on a more contemporary model — fluid and informal.
In this new framework, ostensibly dominated by digital innovations, formerly artisanal disciplines like that of pastry can bring back the sensorial and emotional spectacles once found in circuses and variety shows, and “connect” large groups of people in an analogical way. This installation aims to stage pastry as a social media in its own right, incorporating the fascination and complexities brought forward by a world of infinite variables, wonders and unknowns.
